The Cake Canvas Course at Mejoria International School of Pastry is an intensive 12-day hands-on program (4 days a week) designed to take students from baking fundamentals to professional cake artistry. Conducted in a fully equipped studio, the course focuses on developing strong baking skills, modern cake decorating techniques, and the confidence to start a home bakery business.

Day-wise Learning Highlights

Day 1 – Equipment & Ingredients
Introduction to commercial baking equipment, essential ingredients, and understanding what tools are required to set up a home bakery.

Day 2 – Weights, Measures & Theory
Learn accurate measurements, converting cups to grams, and the science behind egg and egg-free baking and substitutes.

Day 3 – Cupcakes
Bake 4 varieties of cupcakes with different fillings and frostings while learning basic cupcake decorating techniques.

Day 4 – Whipped Cream Basics
Prepare stable whipped cream, learn cake covering, sharp edges, and essential piping techniques.

Day 5–7 – Celebration Cakes & Layered Pastries
Create 7 varieties of celebration cakes, learn cake trimming, levelling, layering, fillings, and modern cake finishing techniques.

Day 8–9 – Classic Cakes
Bake 3 traditional classic cakes while understanding their origins and flavour profiles.

Day 10 – Floral Cupcake Decoration
Master 6 different whipped cream flowers, nozzle techniques, and coloring methods.

Day 11 – Fondant Cakes
Learn to prepare chocolate ganache cakes, cover cakes with fondant, create cake toppers, and use moulds for decoration.

Day 12 – Fondant Finishing & Home Bakery Business
Advanced fondant finishing techniques along with practical business guidance on starting and running a home bakery.

Upon completion, students receive a certificate from Mejoria International School of Pastry, enabling them to confidently pursue cake artistry or start their own baking venture.
